I don't think my family has ever once said grace. My family and family's family have usually prayed at mealtime. Not just at thanksgiving/eating. So the point is we eat more than we give thanks which you attribute to a decline in religion? It sounds like you're implying causation there which perhaps you believe being thankful is tied to belief in God which many people think is the only way to truly be thankful. I wouldn't subscribe to that but it definitely helps for me I believe.
Another thing a decline in organized religion which is true in America is not a decline in belief in God. Worldwide belief in God is rising (some of this is due to the fact that believers have more kids).
Anyway on personal level, the commercialism and materialism that defines American culture at least is something that I'm not a fan of and regardless of what others may do it is a holy day for us. I'm thankful for my wife and family, friendships, the country we live which while it has it's problems also has many freedoms to enjoy. That doesn't mean there isn't many things to work for to make this world a more hospitable place but I'm glad to have a day to focus on thankfulness.
I think it is an important virtue to pursue and helps fight greed and selfishness in many ways. There's my two cents

I have never known any friend or family member of any age say grace in the UK. The only time I have ever experienced it was in Canada, and it was a rather bewildering event.
