Sparty's potato curry recipe

I use my Instant Pot for this.

Turn the instant pot to "saute" and heat up some olive oil.

Once it is hot, add in black mustard seed, cumin seed, and some fresh curry leaves. (If I'm feeling adventurous, I may also add a bit of cinnamon stick, whole cloves, or star anise, but those are not critical.)

Then, put in chopped (red) onion. Let that fry for a bit, then add some garlic and ginger. (Fresh is best, but I usually just end up using jarred garlic and frozen ginger. Don't use garlic powder or ginger powder.)

Add in some tomatoes. Maybe one can of tomato sauce and one can of diced tomatoes? Once that gets going, add some more spices: a little bit of salt, some black pepper, a bit of turmeric, some paprika, and a good amount of chili powder (I like to use Kashmiri chili powder).

Get that gravy going, and then put in some potatoes. I like to use the cute little potatoes (after they are washed, but not chopped or peeled).

It's also nice to put in a second vegetable - preferably a green one (peas, green peas, okra). Using frozen vegetables here is fine.

If you need more liquid, you can add in some vegetable broth around here. Finally, dump in a bunch of coriander powder (more than you would think) on top and then pressure-cook it. Serve with plain Greek yogurt, along with rice or some kind of flatbread.
