Flatbreads are easy, fast, "rustic", and satisfying. Paul Hollywood has great technique and doesn't make it "mystical". It's bread.
If you have a scale, weights are much easier. If you don't use google to convert.
500 g bread flour
11 g salt
13 g yeast
320-330 g water
olives
cilantro
onion
cumin
(pack the filling)

His recipe on Bake Off for ciabatta just is easy (if you have netflix, its there under the masterclass episodes).
I agree with ghug though. I've only once made a bread that was inedible. Otherwise, it's never perfect, I find making it beautiful difficult to do, but I get to slowly tweak and make it my own. And ghug's response reminded me I had crackers in the oven and no timer. Thanks ghug!
