Is there a way to sort by type of game I am searching? For example, if I want to participate in a Gunboat game (anonymous and no press) is there a way to look for a Gunboat type without searching through the entire list of game openings?

Yes, if you click Search and then Game Search, you can select All Joinable Games and tick off all but No Messaging.
