So we're looking for a real, dead, literate male without a postgraduate-level qualification who was born after 31 December 1849 and who was not German, African or Asian. He was neither a famously vegetarian nor famously carnivorous, but lived long enough to have potentially chosen to become a vegetarian.
Was he born in the United States of America?

These assumptions, especially about living long enough to choose, are risky.
