This isn't a guess, because I don't think he fits, but I found this guy: https://en.wikipedia.org/wiki/Furuta_Oribe

I saw him described as a warrior/tea master, which is an interesting combination.

...although I can't help but wonder now if Oribe was an inspiration for Iroh from A:TLA.
