I figured it could be a business person, then looked up "famous american businessmen" and realized that Colonel Sanders fit everything.

I was pretty confident, but I realized that I was asking too many questions in a row. I wouldn't have been offended if someone else had stolen my answer.
It was a very impressive solve at that stage of the game. You had his approximate lifetime, the fact he was born in the US, quite a few occupations ruled out... and not much more than that. Well done!

(Also, he is the third Colonel on our list.)

I'm going to make my free guess again:

Colonel Sanders
It is, indeed, another person with a militaristic title associated with chicken!
I don't know if we've seen that before... someone guessing the correct answer and then scratching it.

I forgot to put "human" in the summary.
I will also spot you all that this person is male, so that the list cleans up a bit:

1,6,7: Real dead male human being
3,10,12: Born before 1910, died after 1970
4,5,9: Not a politician, athlete, musician, scientist, or social media influencer; not primarily known as a writer, artist, or actor
2,8,11: Born in what is currently the United States, but not in what is currently a state with at least seven million people as of the latest census, or Montana, or the Dakotas

So either a male dead after 1970 or a living non-binary person.
Technically speaking, I do not think you have established this is a human being yet.
