If i "start a new game" there's nothing it says "fill empty spots with bots". I can't see anything similari in Basic or Advanced settings

If it's a Gunboat (no communication) game, you can choose "fill empty spots with bots".

Alternatively, you can advertise on the forum for a 7th player. Be sure to mention it's a game amongst friends.

Lastly, sister site vDiplomacy allows variants with 6 players on the Classic map.
